Concepts:
Anti-Magic:
The idea behind this list is pretty obvious. I hate magic, it always seems to wipe me out. I want to make magic using opponents cry. I did go without the Valaya banner because I felt I was anti magic enough with 3 auto dispels, breaking spells on 4+ twice. Ive used 2x breaking a lot lately, never felt the price wasn't worth it. Especially when my High Elf opponent takes a spearhorde mindrazor list, LOL. Taking the Runelord is considered a universal no-no, but I believe leaving the hero points open for an additional cheapsmith, paired with his ability to breath a crapload of fire is worth trying. Oh, and the breaking. I want to break stuff.
Artillery:
Grimm is really here because of the special character requirement for our group's upcoming game. He will probably be coaching my quarrellers on reroll to hit or range. A thing I have found to be quite effective is using grudge throwers to cannon snipe monsters. It's just as effective as cannons in most cases, and has the added ability to smoke witch elves if need be. You guys know why 3x Gyros are there.
Ironbreakers:
I know that maybe some of you think shieldbeards or shielddwarves would work better. And you may be right? In future lists I will make that switch, but there is something about having that staying power with a 5+ ward that tickles my beard. My rival hates Ironbreakers so bad because I have the uncanny ability to hit 5+ with them (But not grungni banner, go figure!?)
Thoughts?

To many points in runesmith/lords also i would only use Grimm with iron drakes or organ gun.

Grimm is fine with quarrellers, even better with thunderers (main drawback of thunderers is often not being able to shoot turn 1, and sometimes stand and shoot range). That said, you want GW on the quarrllers so that rules out thunderers.
Grimm really shines with organ guns. I would definitely fit 2 into a 3K list. Heck, I put 2 in pretty much everything 1500+
Shieldbeards are not better than IB, at all. The reason you might get that idea is that IB take special allowance which is hard-fought with dwarfs, whereas LB are core. If you choose to fill your core with ranged, and have special points free, go for it!
Anyway, certainly nothing really wrong with your list at all, just preferential tweaks I guess. I mean, it's a gunline, let's not pretend it isn't

Oh, it IS a gunline. Hahaha
I'm not afraid to try extreme measures to take out magic. I've lost so many games to it.

This list was pretty solid against my Wood Elf player. He did take out a lot of my artillery with his scouts, but I was able to get a few shots off beforehand that really made the difference. The Burlock/Quarrellers unit was impressive vs Elves, I cleared out a unit of them every turn/2 turns.
The hard part was deployment. I like to deploy 10 wide on quarrellers but that makes my line so long that it alienates support.

I absolutely love that Runelord! Double the S4 breath is freakin' cool as all hell! Did he do any good for ya?
I, too, would like at least 1 Organ Gun with Grimm in the army, but it's not a must. They're just simply amazingly good at practically everything, but especially at hunting Elves!

I charged treekin with him in the unit of iron breakers. The dual flame breathing would have done an insane amount of wounds had he not hit a lucky amount of armour saves. Overall I would take the flame combo again though, it's potentially devastating to elves. The rune lord has the stick around power to make it happen too against a lot of stuff, maybe not a witch elf cauldron blender but...
